Recipe: Raspberry Coffeecake (using Bisquick)

Hi Sharon, I remember making this years ago! A different name, but I think it's what you're looking for:

RASPBERRY COFFEECAKE

1 (3 oz.) cream cheese, softened
1/4 cup butter, softened
2 cups Bisquick baking mix
1/3 cup milk
1/2 cup raspberry preserves
Confectioners sugar mixed with milk (for icing drizzle)

Cut softened cream cheese and butter into Bisquick. Blend in milk. Turn onto lightly floured surface and knead 8-10 times.

On waxed paper, roll to 12x8-inch rectangle. Turn onto greased baking sheet. Remove paper. Spread 1/2 cup preserves down center of dough.
Make 2 1/2-inch cuts at 1-inch intervals on long sides. Fold strips over filling.

Bake at 400 degrees F for 15-20 minutes.

Drizzle warm cake with confectioners sugar mixed with milk.
