Recipe: Multigrain Pancake Mix and Multigrain Hot Cakes (not Bob Evan's)
Breakfast and BrunchHOMEMADE MULTI-GRAIN PANCAKE MIX

Makes 5 lbs. total mix
8 cups unbleached white flour
2 cups buckwheat
2 cups buttermilk powder
1 1/2 cups corn flour
1 cup corn meal
1 cup whole wheat flour
1/2 cup rye flour
1/2 cup sugar
5 tbsp. baking powder
1 tbsp. salt
4 tsp. baking soda
Mix all ingredients together in a large bowl, using a wire whisk. Divide into three containers.
TO MAKE PANCAKES:
1 cup pancake mix
1/2 cup water
1 egg or 2 egg whites
1 to 2 tbsp. olive or canola oil
Mix together gently with a spoon or fork. Prepare as usual.
Makes about 6-8 medium pancakes
MULTIGRAIN HOT CAKES

Makes close to 2 dozen
3 cups water
2 eggs, slightly beaten
1/2 cup powdered buttermilk*
1 cup all-purpose flour
3/4 cup oat bran
3/4 cup whole wheat flour
1/4 cup wheat bran
1/4 cup wheat germ
1 tsp vanilla extract
Mix together water, eggs, and buttermilk powder. Slowly stir in other ingredients. Add extract lastly. Stir by hand or mixer until all lumps are gone.
Ladle out 1/4 cup at a time onto a lightly greased, medium hot griddle. Turn when bubbles stay on top.
*Note: 3 cups of regular buttermilk can be substituted, but eliminate the water.
