Gayle, I just bake the acorn squash, or any kind of winter squash, then scoop the squash from the shell after it has cooled. Then pack it into whatever size containers you prefer and put it into the freezer. The frozen squash can then be used to make winter squash soup, heated with brown sugar and a bit of butter, etc., or even used to make "pumpkin" pie. I especially like to use Butternut squash for making pies.
