HASH BROWN CASSEROLE


2 lb Frozen hash potatoes --
Thaw
1/2 c Margarine -- melt
1 ts Salt
1/2 ts Black pepper
1/2 c Onion -- chop fine
1 cn Cream of chicken soup
2 c Colby cheese -- grate

Preheat oven at 350~. Spray a 9x13 baking pan with non-stick cooking
spray. Combine soup, margarine, salt, pepper, onions and cheese.
Gently mix in the potatoes and pour into prepared pan or dish. Bake
uncovered at 350~ for 35 minutes.

Breakfast Egg Casserole
1 1/2 lb Pork sausage (bulk)
1 c sliced mushrooms
1/2 c finely chopped onion
1/2 c finely chopped bell pepper
12 Eggs
3 c Milk
1 tps Dry mustard
1 tps Salt
hot sauce to taste
6 Slices white bread, cubed
2 c Grated cheddar cheese

Brown sausage and crumble.
Drain well.
Sutee mushrooms, onion, bell peppers
Mix eggs,milk,mustard,salt,cheese Pour over bread cubes in greased 9 x 13
pan Cover - let sit overnight Uncover - bake @ 350 degrees for 1 to 1
1/2 hours

Fruit and Cheese Kabobs
alternate on wooden skewers
strawberries
grapes
honey dew melon
watermelon
pineapple chunks
cantaloupe
lemon slices
lime slices
fresh mint leaves
white cheese ( cubed
yellow cheese

Smoked Sausage and Pineapple Kabobs
alternate on skewers
smoked sausage ( cut in 1" pieces)
pineapple chunks
sweet onions (Vadalia, texas sweet)
cut in small pieces
sweet bell pepper ( cut in 1" squares)
Grill at table on small grill pan or bake for 12 minutes at 400 degrees then place on a warmer tray.


SPINACH TART

1 package chopped spinach -- thawed and drained
1 large egg -- beaten
1/4 cup butter -- melted
3 oz. cream cheese softened
1/4 teaspoon salt
1/8 teaspoon pepper
3 tablespoons onion -- grated
1 cup Romano cheese -- grated


1 pie crust
Heat oven to 350.
Combine all ingredients. Pour into pie crust.
Sprinkle with Romano.
Bake 30-35 minutes.
Serve warm.
