Brunch eggs
12 thin canadian bacon slices
3 (4oz) pkg. shredded swiss cheese
12 lg. eggs
1 cp. whipping cream
1/3 cp. grated parmesian cheese
1 tsp. paprika
1/4 cp. chopped parsley, fresh
1/2 tsp. ea. salt and pepper
place bacon in single layer in 13x9" pan. sprinkle w/swiss cheese. cover & chill. break eggs over cheese spacing evenly. pour whip cream over eggs. sprinkle w/S&P. bake @ 425 for 10 min. then sprinkle w/parm. cheese & paprika. bake 8-10 min. more till set. sprinkle w/parsley, let stand 10 min before serving. serves 8-10.
SAUSAGE BALLS
3 cps. bisket mix
1 lb. hot ground pork sausage
1 10 oz. pkg. sharp cheese, shredded
combine everything together in a lg. bowl or food processor. press mix together w/hands. shape into 3/4" balls. place on baking sheet, cook @ 400 for 15 to 18 min. or till brown. yield 8 doz.
hope this helps! most all of it can be made ahead and if you're feeding a croud rent a double chafing dish, they can be a godsend!
