Good morning. Yes!! the fat has been omitted in this recipe. I am going to add what you do not have. Fruit cakes are very heavy...Sooooo, you must employ a strong flour for your cake recipe. Use 1/2 all-purpose bleached flour and 1/2 bleached bread flour.

Now here is the secret for the cake portion of your recipe. All you need to do is do a typical "POUND CAKE recipe Equal amounts of FLOUR, SUGAR, FAT, EGGS, in WEIGHT...with~in say about plus or minus 10% to each other.

I will state The weights for you.
Eggs large 1.75,oz each
Flour 4.5,oz per cup
Butter 4,oz per stick 4,sticks per pound.
Sugar, 7,oz per cup. You now have what you want.

Go to it now & post your results.

Oh yes do not forget to wash any dried fruits you are using to wash off the chemicals that preserve it.
