Here is a recipe for granola that I make to take camping.
I'm sure it will be just as good with the nuts left out.

Great Granola
from "The Enlightened Eater"

5 cups rolled oats
1/2 cup unsweetened shredded coconut
1 cup chopped nuts
1/2 cup natural bran
1 cup oat bran
1/2 cup wheat germ
3/4 cup sunflower seeds
1/2 cup honey
1/4 cup corn or safflower oil
2 tsp. vanilla
1 cup raisins

dried fruit, sesame seeds, sunflower seeds, or whatever else you like

* Combine the first seven ingredients in a large bowl. Heat the honey, oil, and vanilla in a small saucepan over low heat until blended. Pour this mixture over the dry ingredients, stirring to coat well.
* Spread the mixture in a thin layer on one or two large cookie sheets. Bake at 350 degrees F for about 20 minutes, stirring at intervals until lightly browned. Cool completely, mix in raisins and other assorted goodies, and store in an airtight container in the fridge.

* Makes 12 cups.

Great Granola Bars

1/4 cup soft margarine, melted
2 tbsp. packed brown sugar
1/2 tsp. vanilla
1 egg
2 1/2 cups homemade granola

Combine the margarine and sugar in a medium-sized bowl and blend well.
Add the vanilla and egg and beat until smooth.
Stir in the granola.
Pat the mixture into a lightly greased 8-inch square pan.
Bake at 400 F for about 15 minutes or until golden brown.
Cool completely before cutting into bars.

Here is another granola bar recipe that I love. These aren't very
granola-ish but they're good and keep well.


Crunchy Granola Fibre Bars

1 3/4 cups Post 100% Bran Cereal
3/4 cup firmly packed brown sugar
3/4 cup butter or margarine
2 tbsp. corn syrup
1 teaspoon baking soda
1 3/4 cups quick-cooking rolled oats
3/4 cup all-purpose flour
1 cup coconut

* Combine cereal, oats, flour and coconut.
* Cook brown sugar, butter, and corn syrup in small saucepan over medium heat until mixture boils, stirring constantly. Remove from heat, stir in baking soda. Add to cereal mixture and combine well.
* Press evenly into lightly greased 15 x 10 inch jelly roll pan.
* Bake at 350 degrees F for 12 to 15 minutes. Cool slightly, cut into bars while warm.
* Makes 30 bars.

117 calories per serving, 1.6 g protein, 5.9 g fat (so it's about 35% of calories from fat), 16.1 g carbohydrates, 2.1 g dietary fibre
