Recipe: Lighter-Than-Light Fried Smelts or Vegetables

3/4 cup cornstarch
1/4 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup water
1 egg, slightly beaten
Cleaned smelts (or fresh vegetables)
1 quart corn oil (for frying)
In a medium bowl, combine cornstarch, flour, baking powder, salt and pepper. Add water and egg.
Dip smelts or vegetables in batter and fry in oil over medium heat.
