We lived in Tucson for 9 years & picked up some good, basic recipes
CHICKEN CHIMICHUNGAS
Cook 4-5 chicken breasts till tender, then shred (I use the crockpot to cook the chicken the night before). Place into the pan, the chicken & a jar of salsa (for less chunks of onion & tomato, we use Taco Bell taco sauce). You may add need to add a little water to be able to coat all the chicken. Cook down till "dry"

Place a small amount of chicken-salsa mixture on a warmed flour tortilla (about 16 small or 8 large). Microwave 2-3 tortillas at a time for 10-20 sec. It makes it easier to wrap. Add strips of cheese (I use mozzerella & Monterey Jack, but you can use co-jack, hot pepper cheese or a combination). Now fild the tortilla like a burrito, fold the 2 sides in; then roll tortilla up. Secure w/toothpicks. You can make these up the night before or early in the day, just keep covered.

Fry in hot oil for 3-5 min till golden brown. Drain on paper towels. Serve on a bed of lettuce topped with salsa, sour cream & shredded cheese. You could substitute roast beef or bean for the chicken. The chicken is the best in my opinion!!

HOMEMADE FLOUR TORTILLAS
4 cups flour
2 tsp salt
1/2 cup Crisco shortening
1 cup warm water
Mix flour & salt together. Cut in Crisco into very small pea-size or smaller pieces. Add water slowly. Knead till dough is smooth(about 5-10min) by hand or doughhook. Dough should be very soft & springs back. Pinch of egg-sized balls of dough with oiled hands. Lightly coat each ball with vegetable oil. Set in bowl. cover with cloth & let dough balls rest for 15-30 minutes. Shape balls into 6-inch circles with rolling pin. Heat ungreased teflon pan until hot. Brown tortillas on one side (about 20-30 seconds). When dough begins to bubble, turn & cook the other side. Should have brown spots where the bubbles were. Makes about 18 tortillas.

If you've never had homemade tortillas, you're missing out! I had to make them now that we moved back to Ohio since I couldn't get my hands on REAL ONES! A wonderful breakfast is to have warm, homemade tortillas, scrambled eggs, bacon & fresh fruit. Enjoy!
