I rely on The Ultimate Low-Fat Mexican Cookbook by Anne Lindsay Greer. Her recipes are not overly complex, and instructions for enchiladas using corn tortillas are the most successful I've tried. I picked up my copy at Sam's Wholesale Club, if y'all have one.
