Kathy, many people love mole...so I included it here. (I don't care for it. It doesn't do a thing for my chocolate gene.) I will say it's worth a try.
By the way, I lived in Texas several years, too.
So here's a few recipes. Will forward more later, okay?


GUAJOLOTE EN MOLE POBLANO (TURKEY IN MOLE SAUCE)

Yield: 4 servings

2 Turkey legs
2 tsp Of water
1 Onion
2 Cloves garlic (whole)
1/2 Corn tortilla
1 French roll
2 tbsp Oil
Pinch coriander
Pinch anise
Pinch cumin
Pinch ground cloves
1/2 tsp Freshly ground black pepper
6 tbsp Coarse ground red chile
2 tbsp Blanched almonds
2 Squares unsweetened
Chocolate

Put the turkey to simmer with the onions and garlic. They should simmer till the meat is ready to slip, not fall, off the bones.

Meanwhile, fry the tortilla and the roll in oil till crisp.

Using a mortar or blender, grind the crisp bread up
with the herbs, spices, almonds, and chocolate until
well mixed.

Remove the turkey, onion, and garlic from broth.
Discard the onion and garlic, and cook the broth down
to 2 or 3 cups. Reduce to a simmer, and slowly stir in
the blended ingredients. Return the turkey to the
sauce, and simmer for another 20 minutes.

Mexican Wedding Cakes (Cookies)



1 cup softened butter 1/2 cup powdered sugar 2 cups all purpose flour 1 teaspoon vanilla dash of salt Cream butter and powdered sugar
together until smooth. Add flour, salt, and vanilla (Mixture is
stiff). Pinch off walnut size pieces of dough. Roll into a ball.
Place on ungreased cookie sheet (These cookies spread a little as
they bake). Bake at 400 degrees about 10 - 12 minutes (bottoms will
be light brown). Roll cakes in powdered sugar immediately after
removing from oven. Cookies are fragile. Cool rolled cakes on rack.

Makes about 4 dozen.

Tex Mex Ranch Casserole

: Weight Watchers Homestyle Recipes
Serving Size : 8

1 lb turkey -- ground/cooked
1 10 oz can pinto beans -- cooked/mashed
1 tsp garlic powder
1/2 tsp cumin
1/2 tsp oregano
1/4 tsp black pepper
1 cup onion -- chopped
1 1/2 cup squash -- diced
1 1/2 cup zucchini -- diced
1/2 cup red pepper
2 1/4 ozs cheddar cheese -- shredded
2 1/4 ozs mozzarella cheese -- shredded
4 egg whites
3 tbsps bread crumbs

Preheat oven at 350. Prepare a 13 x 9" pan with cooking spray. In a mixing bowl, combine turkey, beans, garlic powder, cumin, oregano, and pepper. Coarsely mash beans with pastry blender; transfer to prepared pan. Prepare skillet with oil; add onion. Cook over medium-high heat 2 minutes.
. Add squash, zucchini, and red pepper; cook 3 minutes longer. Spread vegetable mixture over turkey mixture. In a small bowl, whisk together cheeses and egg whites; pour over casserole. Sprinkle with bread crumbs. Bake for 30 minutes, or until golden brown.

Texas Cheese Wafers

Yield: 20 servings

1 cup Butter; softened
2 cups Flour
8 oz Cheddar cheese; grated
1/2 tsp Cayenne pepper
1/2 tsp Salt
2 cups Toasted rice cereal

Mix butter, flour, cheese and seasonings and stir lightly. By
teaspoons, roll into balls and put on a cookie sheet. Dip fork tines
into flour and and press into each wafer in a crisscross pattern.
Bake 15 minutes or until lightly browned. Store in airtight
containers till ready to serve!
