Recipe: REC: Apache (Squaw) Bread

Chart House Indian Bread (2 pound loaf)

1 1/2 cups water
1 tbsp molasses
2 2/3 cups bread flour
1 cup whole wheat flour
1/3 cup wheat bran
1/4 cup 10 grain cereal (I used 9 grain cereal)
2 tbsp steel cut oats
2 tbsp rye flakes
1/4 cup brown sugar
2 tsp salt
2 tsp powdered caramel coloring (King Arthur)
1/2 tsp diastatic malt powder (King Arthur)
1 tbsp vital wheat gluten
2 to 3 tsp yeast

Place in bread machine in order recommended by the manufacturer. I use my machine to make dough and bake it in the oven because you get a much better crust. To get a shiny crust I make a wash of malt syrup (honey would work just as well) and water to brush on just before baking. A dough enhancer with diastatic malt powder and vital wheat gluten can be substituted for them.

Chart House Indian Bread using Sourdough Starter

2 cups starter
1/2 cup water
2 tbsp molasses
1 2/3 cup bread flour
1 cup wheat flour
1/3 cup wheat bran
1/4 cup 10 grain cereal
2 tbsp scotch oats
2 tbsp rye flakes
1/2 cup brown sugar
2 tsp salt
2 tsp powdered caramel coloring
1/2 tsp diastatic malt powder
1 tbsp vital wheat gluten




Indian Bread

2 pkgs yeast (2 tbl)
1 teas honey
1/2 c warm water

Proof yeast in above.....then process the following in blender or food processor:
1/4 c honey
1/3 cup raisins
1/4 c brown sugar

add to yeast mixture along with:
1 3/4 c milk, room temperature
1/3 c butter, melted
1 tbl salt
1 1/2 c rye flour
2 1/2 c regular flour
1 1/2 c whole wheat flourB

lend as normal for bread, and knead, let rise, punch down, and shape into two round loaves.Bake at 375 about thirty minutes...


Indian BREAD
(ABM - 1 1/2 lb loaf)

5/8 c Milk
5/8 c -Water; (for Welbilt/Dak -machines add 2 TB. more -water)
2 tb Oil
1 1/2 tb Honey
2 tb Raisins
2 tb Brown sugar
1 1/2 c Bread flour
1 1/4 c Whole wheat flour
3/4 c Rye flour
1 ts -Salt
2 ts Red Star active dry yeast -for 1 1/2 lb. Panasonic/ -National machines use 4 1/2 -tsp. yeast

In a blender, liquefy the milk, water, oil, honey, raisins, and brown sugar on high speed. Combine mixture with rest of ingredients in bread pan, select Light Crust setting, and press Start. After the baking cycle ends, remove bread from pan, place on cake rack, and allow to cool 1 hour before slicing. Source: "Bread Machine Magic" by Linda Rehberg and Lois Conway.
