FENNEL ORANGE AND CILANTRO SALAD
2 cups diced fennel
1 1/2 cups diced. skinned orange segments
1/2 cup diced red bell pepper
2/3 cup chopped red onion
1/4 cup chopped green onions
1/3 cup chopped cilantro
FOR THE DRESSING:
1 tbsp. low sodium soy sauce
1 tbsp. olive oil
1 tsp. liquid honey
1 tsp. minced garlic
TO MAKE SALAD:
Combine fennel, oranges, red bell pepper, red onion, green onions and cilantro in a large bowl.
TO MAKE DRESSING:
Whisk together olive oil, soy sauce, honey and garlic in a small bowl.
Pour dressing over salad. Toss and coat. Garnish with toasted almonds.
Serves 4
