MAHI MAHI HUSH PUPPIES

I figure you can tweak these with the regular seasonings of the Bubba Gump Hush Puppies. Good Luck!
oil for deep frying
1 package of dry Hush Puppy mix
1/2 cup water
Fresh Mahi Fillet*
1 Tbsp Maryland Crab Seasoning (optional)
Toothpicks
Heat your favorite vegetable oil in a deep fryer. If you don't have a deep fryer a deep sauce pan works OK.
Prepare hush puppy mix as directed on the package then add 1/2 cup additional water. You want the mix to be just a little thicker than pancake batter.
Trim darker meat from the Mahi filet. Cut the fish into 1/2 to 3/4-inch cubes. Sprinkle lightly with crab seasoning such as Old Bay if desired.
Stick each cube with a toothpick. Dip into hush puppy mix then drop into the hot oil toothpick and all.
Fry for 3 minutes or until dark brown. Drain on a paper towel and serve immediatly.
The kids absolutely love these. (grownups too) My two kids can eat them faster than I can make them. Make only enough to eat within an hour or two, they lose the crispy outer shell after that.
*You can substitute other white flaky fish such as catfish if the Mahi is unavailable.
