Recipe: REC: French Onion Soup Gratine

French Onion Soup Gratine

2 pkgs. onion seasoning mix ( recipe follows)
4 cups water or beef broth
1/4 cup butter or margarine
6 slices French bread, 1 inch thick
3 cups shredded Swiss cheese (12 oz.)
2 Tbsps. Parmesan cheese

In a large saucepan, combine onion seasoning mix and water or broth. Bring to
a boil over medium-high heat. Simmer over low heat about 10 minutes. Preheat
oven to 375*F (190*C). Spread butter or margarine evenly on 1 side of bread
slices. Arrange buttered bread slices on an ungreased baking sheet. Toast bread
in oven until browned and quite dry, about 10 minutes. Remove from oven.
Sprinkle about 2 Tbsps. Swiss cheese on each toasted bread slice. Return bread
to oven until cheese melts. Divide remaining Swiss cheese evenly in 6 soup
bowls. Pour soup into bowls. Float 1 bread slice on top of each. Sprinkle evenly
with Parmesan cheese. Makes 6 servings.

Onion Seasoning Mix (basically dry onion soup mix)
4 tsps. instant beef bouillon granules
8 tsps. dried minced onion
1 tsp. onion powder
1/4 tsp. bon apetit seasoning

Cut a 6 inch square of heavy duty foil. Place all ingredients in center of foil.
Fold foil to make an airtight package. Label with date and contents. Store in a
cool, dry place. Use within 6 months. Makes 1 package onion seasoning mix.( I
would put this in a ziplock baggie)
