Recipe(tried): Recipes Using Graham Flour - Graham Bread, Date Nut Bread, Strawberry Shortcake, Carrot Cake
Recipe Collections I substitute whole wheat flour for Graham flour:
GRAHAM BREAD
1 cup thick sour milk
1/2 cup molasses
1 cup Graham flour
1/4 teaspoon salt
1 cup wheat flour
1/2 teaspoon baking powder
1 teaspoon soda
Sift Graham and wheat flour and measure. Add baking-powder and salt; sift again. Dissolve soda in hot water, add to sour milk, and mix with molasses. Combine wet and dry mixtures, bake in bread-pan 1 1/2 hours.
DATE NUT BREAD
1 1/2 cups White flour
5 tsp Baking powder
1 1/2 tsp Salt
1/4 tsp Baking soda
1 1/2 cups Graham flour
1 cup Sliced dates
1 cup Coarsely chopped nuts
1/2 cup Brown sugar
1 1/2 cups Milk
1/4 cup Molasses
Pit dates and cut into 5 or 6 slices with scissors or sharp knife. Sift flour, measure, and sift with baking powder, salt, and baking soda. Add sugar, milk, and molasses. Add graham flour in which dates and nuts have been dredged. Beat until thoroughly mixed. Pour into well-oiled loaf pan. Bake in moderate oven (375 degrees F) 1 hour.
STRAWBERRY SHORTCAKE
1 pint of rich buttermilk
1 teaspoon of baking soda
1/2 teaspoon of salt
graham flour to mix
Filling:
1 quart of strawberries
sweetened cream.
To buttermilk add baking soda and beat well; stir in salt and enough graham flour to make a batter rather stiffer than cake batter; pat into two thin cakes and bake in a brisk oven. If you object to this amount of crust lay one on top of the other to bake, with bits of butter between. Have ready a quart of strawberries sweetened and mashed. Pull the cakes apart, butter and spread the fruit between and on top. Eat with plenty of rich, sweetened cream.
CARROT CAKE
1 1/2 cups oil
1 cup Honey
4 Eggs
2 cups graham flour
2 tsp cinnamon
2 tsp baking powder
2 tsp Baking soda
1/2 tsp Allspice (or cloves)
1 tsp Salt
2 cups Shredded carrots
1/2 cup Coconut, unsweetened
1/2 cup Chopped nuts
1 cup Crushed pineapple, unsweetened,(in juice, undrained)
Mix oil and honey. Add in eggs one at a time. Sift dry ingredients. Add to wet ingredients and mix well. Add remaining ingredients and mix well. Pour into 2 square 9x9 pans. Bake at 350 F for about 1 hour.
Top with a cream cheese icing if desired.
