TKL Cooking Club White Chocolate Mud Cake
125g white chocolate melts
1/2 cup warm water
125g butter
1 cup caster sugar
2 eggs
1/2 cup sour cream
1 1/4 cups pl flour
1/2 cup SR flour
2 Tbls whisky
Grease and line 8"round tin. Combine white choc and
water in a small bowl, stir
until smooth. cool to room temp. Beat butter and sugar
with electric mixer
until light and fluffy. Add eggs one at a time, beat to
combine, then add chocolate and mix well. Transfer to
larger bowl and fold in sour cream and sifted flour.
Place mixture into tin and cook in mod oven 125 C
until lightly browned and firm. Remove from oven
sprinkle whisky over top and leave in tin until cool.
Enjoy.

WHITE MISSISSIPPI MUD CAKE 1 cup margarine
1 cup nuts -- chopped
1 cup coconut
1 1/2 cups flour
2 cups sugar
4 medium eggs
1 large jar marshmallow cream
Icing:
1 stick margarine
1/3 cup cocoa
1/3 cup evaporated milk
1 teaspoon vanilla
1 lb. box powdered sugar
Melt margarine. Stir in coconut, then
the rest of ingredients.
Spread in 9 x 13 in. pan and bake at
350 degrees for 25 to 30 minutes.
As soon as cake comes from oven,
spread the marshmallow cream on
top.
Let stand until cool before spreading
with icing
Icing: Melt margarine, add milk and
vanilla.
Mix cocoa with sugar and stir into
margarine mixture. Beat well.
Nuts may be added to icing. Spread
