Recipe: Red Velvet Cake

Hi Jack, I have never heard of the cookie version although, they sound good. Here's a recipe for

Red Velvet Cake

2 1/2 cups self-rising flour
1 cup buttermilk
1 1/2 cup veg. oil
1 tsp. soda
1 tsp. vanilla extract
2 (1 oz.) bottles red food coloring
1 1/2 cups sugar
2 tsp. cocoa
1 tsp. white vinegar
2 large eggs.

Preheat oven to 350. Mix all ingredients together. Spray 3 - 9 inch round baking pans with non-stick coating spray. Pour batter equally into the 3 pans. Bake for 20 min. Test for doneness with toothpick. Cool layers in pans on wire racks for 10 min. Remove layers from pans and cool completely on racks.

FROSTING:
1 1/3 sticks butter (softened)
10 oz. cream cheese (softened)
1 - 1 lb. box confectioners sugar
2 cups chopped pecans or coconut

Combine butter, cream cheese and confectioners sugar in a bowl; beat until fluffy. Fold in nuts or coconut. Fill and frost cake when its cool. Top with coconut. Refrigerate for at least 1 hour before serving.
