Recipe(tried): Redibase Vegetable Soup
SoupsREDIBASE VEGETABLE SOUP
3 tbsp. butter or margarine (or oil)
1/4 cup diced celery
1/4 cup diced carrot
2 tbsp. minced onion
2 tbsp. diced sweet red pepper
4 cups water
4 tsp. Vegetable Redi-Base
1/2 cup diced peeled cooked potatoes
1/4 cup frozen peas
1/4 cup frozen corn
1 small tomato, seeded and diced
2 tsp. dried basil
Salt and pepper to taste
Saute celery, carrot, onion and red pepper in butter or oil until onion is soft.
Add 4 cups water, Vegetable Redi-Base, potatoes, peas and corn. Bring to boil. Simmer until vegetables are cooked.
Add tomato and basil. Season for salt and pepper. Simmer 5 minutes. Serve.
Makes 4 servings
