Refrigerator Oatmeal Cookies
1 cup solid shortening
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp. vanilla
1-1/2 cups flour
1 tsp. salt
1 tsp. soda
3 cups quick cooking oatmeal
1/2 cup chopped walnuts
* Mix and roll into logs. Wrap in wax paper. Refrigerate overnight. Next day, slice and bake at 350 degrees until lightly browned around edges.
