Elly, this was posted by Susan last week. Since
it starts with a gallon of zucchini, it may be
worth a try! There are many more recipes in

I have never made this personally, but my sister cans tons of this stuff every year! Whenever you eat a dessert with pineapple in it, you can't tell if it's the real thing or zucchini!

ZUCCHINI-PINEAPPLE

1 gallon shredded zucchini (or cubed)
46 ounce canned pineapple juice
1-1/2 cups lemon juice (bottled)
2-1/2 cups sugar
pineapple flavoring, optional

Simmer all ingredients for 20 minutes. Pack into clean pint jars. Process for 20 minutes in boiling water bath. Use like crushed pineapple.
Tastes like the real thing!
