Elly, have you made the cucumber rings that resemble canned apple rings? Taste very much like apple rings when chilled. Pretty as a gift. Suppose you have done relishes? How about drying the zucchini? I dry it both shredded and sliced. Always nice to have some because there is a time when they aren't fresh. I took a big bag of zucchini up to the center where the Meals on Wheels are prepared and they were delighted. Told me they would take all I had. Hope some of these ideas will lighten your load.
