Recipe: Rieviera Rice Salad

Riviera Rice and Pea Salad
Delicious rice and pea salad. Nice with Curried chicken.

3 1/2 cups boiling water
2 chicken bouillon envelopes or cubes
1 1/2 cups converted rice
1/2 cup raisins
1/2 cup frozen or fresh peas
1/2 cup green onions, chopped
1/4 cup Miracle Whip salad dressing
2 tablespoons chives, chopped

DRESSING
3-4 tablespoons wine vinegar
2/3 cup oil
3/4 teaspoon salt
1 clove garlic, crushed
1 teaspoon Dijon mustard
1 teaspoon tarragon
black pepper, freshly ground

To boiling water, add bouillon cubes and then rice. Reduce heat to simmer and cover tightly. After 10 minutes, add raisins, re-cover and cook for 10 minutes. Add fresh or frozen peas, re-cover and cook for 10 more minutes or until all the liquid is absorbed. Meanwhile, whisk together all ingredients for the dressing. When rice is done, remove from heat and add 1/2 to 3/4 cup dressing. Stir well. Add green onions and Miracle Whip. If necessary, add more dressing to moisten. May be served warm or pressed into a salad mold and chilled. Garnish with chopped chives and/or cherry tomatoes. Serves 8-10.
