Recipe: Rosy Rock Cookies

Hi Wendy,

I've seen a few similar versions of this cookie. I hope this one is what you remember:

Rosy Rock Cookies
From: Cookbook USA
Makes 84 cookies

1 3/4 cups flour
1 1/3 cups sugar
1 tsp. baking powder
1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. allspice
1 cup margarine, softened
1 egg
1 can (10 3/4 oz.) condensed tomato soup, undiluted
2 1/2 cups uncooked quick oats
1 cup seedless raisins
1 cup chopped walnuts

In large bowl stir together flour, sugar, baking powder, soda, cinnamon and allspice.

Add butter, egg and soup.

Beat at medium speed 2 minutes, constantly scraping sides and bottom of bowl.

Stir in oats, raisins and walnuts.

Drop by rounded teaspoonfuls 1 1/2 inches apart on greased cookie sheets.

Bake in 350 degree oven for 12-15 minutes or until lightly browned.
