SPINACH AND WHITE BEANS WITH GARLIC
1 clove garlic, minced
1 tablespoon olive oil
1/2 pound spinach, stems discarded, leaves washed well, spun or patted dry and chopped coarsely
1 (15 ounce) can cannellini beans, rinsed and drained
1 tablespoon balsamic vinegar
Salt and freshly ground black pepper (to taste)
In a skillet, cook garlic in oil over moderate heat until golden. Add spinach, stirring until wilted.
Add beans, vinegar and salt and pepper to taste and simmer gently for at least 2 minutes.
Serves 2 as a side dish
