Recipe(tried): s.waterman --MW cake

This as a cake recipe I have had very good luck with. I have it in Mastercook,
but could not get it to paste into TKL. It is from a 1987 issue of Microwave
Times.

Moms Carrot Cake

1 1/4 C. Cooking oil
2 C. Sugar
3 Eggs
1 can (8oz.) Crushed pineapple, undrained
2 tsp. vanilla
2 C. shredded carrot
2 1/2 C. coconut (flaked or shredded)
1 C. chopped nuts
2 C. flour
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt

Combine oil and sugar; mix well.
Add eggs, one at a time, beating well after each.
Stir in pineapple, vanilla, carrot, coconut, and nuts.
Add flour, cinnamon, soda and salt; mix just until blended.
Spoon evenly into greased microwave-safe tube pan -- 10 - 12 C.
MW (med-high 70%) uncovered, 15 min. rotating pan once. Then--
MW (high) 3 - 4 min. or until no longer doughy, rotating pan once.
Let stand 10 min; then invert onto serving plate.
I frost this with a cream cheese frosting.
