MEAL IN ONE
I have a dish I learned to make when my 39 year old son was a baby and we were living from hand to mouth. It's filling and tasty and keeps and gets better for days.
potatoes
salt and pepper (to taste)
1 1/2 lbs of ground beef
chopped green bell peppers and onions
1 cup water
1 (1 lb) can diced tomatoes
3 to 4 good sized bay leaves
1 tbsp. cornstarch dissolved in 1/2 cup of water
shredded cheddar cheese
Start by slicing potatoes in 1/2 inch slices and brown them until fork done, drain and place in bottom of Pyrex dish. Salt and pepper to taste.
In another skillet, be browning 1 1/2 lbs of ground beef with green peppers and onions, drain greasy liquid, and add 1 cup of fresh water. Place back on burner, add 1 can of diced tomatoes and 3-4 good sized bay leaves to simmer for about 10 minutes.
Add 1 tbsp. cornstarch dissolved in 1/2 cup of water to thicken, remove bay leaves. Pour this mixture over the potatoes, top with shredded cheddar cheese.
Place in oven at 400 degrees F for about 10 minutes. Let stand until settled to cut in serving sections.
The only thing you'll need with this is some hot bread or even better Texas toast with butter and garlic browned in oven.
I never knew the name of it, a woman that I don't even remember her name from Greece gave it to me and I've been cooking it ever since. I guess a good name would be a "Meal in One".
