Recipe(tried): Salami and Eggs
Misc.Hi Caroline, Here is a simple luncheon dish my Mom made when I was growing up. Very popular with Italians. "Salami and Eggs". Cut in half as many pieces of Salami as needed. Place in ungreased frying pan. Cook over low heat until Salami is soft in texture and lightly darker in color. Prepare and slightly beat as many eggs as neeed with milk,salt and pepper. (As if preparing scrambled eggs). Mix in with Salami and cook until scrambled egg texture. Serve as a sandwich on Italian Bread or bread of choice.
You can also let eggs set in pan with Salami to form a Omlet texture and serve as a omlet with bread and butter on the side. My Mom also used Bologna instead of Salami. Very Tasty!!!
