I made this 'salsa salad' on a whim one night. My wife had gastric bypass a couple years ago and ever since, she can't eat leafy veggies. So I made this salad and she loved it so much, I thought I'd share it with you all...
In a bowl, dice up one half cup of each onion, green, red and yellow bell peppers, Feta cheese crumbles. Toss with a tablespoon of olive oil and red wine vinegar and salt and pepper to taste. You can also add regular salad dressings if you wish. Its simple and easy.
As I have been my wife's 'personal Iron Chef' since her surgery, I've gotten quite good at healthy, very low carb foods, most of them I make up myself. If anyone is interested in low carb dinners, I'll be happy to share my tried-and-true recipes. Just drop me a line. :-)
