ARTICHOKE STUFFED TOMATOES
2 cups canned artichoke hearts, drained and chopped
3/4 cup mayonnaise
1/2 cup chopped green onions
1/2 cup celery, chopped
6 tomatoes, peeled and hollowed out
salt and pepper to taste
10 to 12 slices bacon, fried crisp and crumbled
Combine first 4 ingredients, chill.
Salt and pepper inside of tomatoes well and allow to drain upside down.
When ready to serve, fill tomatoes with artichoke mixture and top with crumbled bacon.
This can also be used with cherry tomatoes as an appetizer.
