Recipe: Jamaican Jerked Chicken Salad

JAMAICAN JERKED CHICKEN SALAD

20 oz. romaine lettuce, chopped
10 oz. Roma tomatoes, julienne
avocado, sliced fresh baby spinach leaves, cleaned and dried
5 oz. carrots, julienne
5 oz. red onions, thinly sliced
papaya, cubed
20 oz. precooked jerked or spicy chicken breast, sliced
1 (15 oz.) bottle your favorite balsamic vinaigrette
5 oz. passion fruit juice, concentrate
2 oz. green onion, finely chopped
3 oz. fried coconut chips

Plate romaine lettuce and top with remaining vegetables, papaya and chicken.

In a separate bowl, combine balsamic vinaigrette and passion fruit concentrate. Drizzle over salad. Garnish with green onions and coconut chips.
