Recipe: Salted Nut Rolls

Misc.

Josie: I have not tried this recipe. It does
sound similar to the one you requested. I hope
it is!

______________

Salted Nut Rolls in the Microwave

Ingredients

1/2 pound caramel or about 30 individually wrapped caramels
2 tablespoons evaporated milk
1/4 cup butter
1 cup powdered sugar
1 large jar (24 ounces) dry-roast salted peanuts, without skins

Combine caramel and milk in a 1-1/2-quart
microwavable casserole. Microwave 1/2 power
for three to four minutes, stirring several
times until caramel is melted. Add butter,
stir until melted. Add powdered sugar
gradually, beating mixture with an
electric mixer to prevent lumping.

Beat well until smooth. Cool mixture about
10-15 minutes, stirring several times.

Drop by teaspoons into a dish of nuts.
Form into logs and roll until coated.

Place on waxed paper in refrigerator to set.

Store in a tightly covered container in
refrigerator. Makes about 30 pieces.
