Recipe(tried): Saturday night dinner at my house - Strawberry Pie

It has been a hot one today....I stayed in the backyard while the kids swam in their pool. I put a Boston Butt in the crockpot and let it cook all day. This evening, I added Potato Salad, Baked Beans and fresh Strawberry Pie to the menu. I will serve the Pork Butt, shredded, on buns with the BBQ sauce on the side. Hope everyone stays cool.....

Strawberry Pie

1 qt. fresh strawberries
3/4 cup sugar
1 cup water
1-2 tbsp. cornstarch
small pkg. strawberry jello
1 baked pie shell

Slice strawberries and place in baked pie shell. Mix the water, sugar and cornstarch...bring to a boil until thickened. Set off the stove and add 1/2 pkg. of jello. Stir until well mixed and let cool..Pour over strawberries in the shell and set in the fridge to set. Serve with whipped cream.

I do nothing special to my BBQ in the crockpot. I just put it in and salt and pepper well. Cook on low for 7-8 hours and then pour off juices. Pick out the fat and shred with a fork. Serve with favorite BBQ sauce. I sometimes will make Cole Slaw to put on the sandwich as well, but my husband has flair ups from his post gallbladder surgery, so I limit Cole Slaw to 1x per month if that much in my menus.
