Recipe: Sauerkraut Salad (1950's - 60's)

SAUERKRAUT SALAD

1 large (28-30 ounces) can sauerkraut, rinsed and drained
1/2 cup sugar
1/2 cup vinegar
1 cup diced green bell pepper
1 medium-size onion, diced
1 small can/jar pimientos
1 cup diced celery
Ground carrots (optional)
Caraway seed (optional)

Heat sugar and vinegar together until sugar is dissolved; cool.

Combine sauerkraut (here Mary wrote and underlined the word 'undrained' so maybe she didn't rinse and drain it as the recipe directs) with remaining ingredients. Combine with vinegar-sugar mixture.

Serve on rye sandwiches with ham or cold cuts and cheese.

Mary's note: "Oil and vinegar dressing may be added."
