SEAFOOD WONDER
6 cups water
1 1/2 tbsp. salt
1 1/2 to 2 pounds unpeeled medium fresh shrimp
16 oz. uncooked linguine
2 cups fresh snow pea pods (about 6 oz.), trimmed
6 green onions, chopped
4 medium tomatoes, peeled, seeded and chopped, (about 1 1/4 lbs.)
1/2 cup olive oil
12/3 cup white wine vinegar
1/4 cup chopped fresh basil
1/4 cup chopped fresh parsley
1 tsp. garlic salt
3/4 tsp. coarsely ground pepper
Bring water and 1 1/2 tablespoons salt to a boil; add shrimp, and cook 3 to 5 minutes or just until shrimp turn pink. Drain and rinse with cold water. Chill.
Cook linguine according to package directions, including salt; rinse with cold water and drain. Set aside.
Cook snow peas in a small amount of boiling water 2 to 3 minutes or until crisp tender. Plunge into ice water to stop cooking process; drain.
Peel shrimp, and devein, if desired. Combine shrimp, linguine, snow peas, green onions, and remaining ingredients in a large bowl; toss well. Cover and chill at least 8 hours.
Makes 8 to 10 servings
