Recipe(tried): Secret for tender pork chops

Main Dishes - Pork, Ham
Try soaking chops in enough water to cover meat. Remove meat and add roughly 4 TBSP of baking Soda (click here for more info about the amount of baking soda). Put meat in and soak (in refrigerator) overnight. Rinse thuroughly and cook. Oriental restaurants have been using this for years. They can offer cuts of lesser quality as prime pieces.
