Recipe(tried): Sesame-Soy Marinated Chuck Roast (My Great Recipes Cards)
Main Dishes - Beef and Other MeatsHi Everyone,
Guess what? I have that recipe on file. I collected the majority of the cards, and have them available. Today, I did a search, in hoping to find others who may have these cards, and can provide the missing ones, I don't have. My set didn't get complete because the program ended. I, always, seem to get "on the tail end" of any program, and lose out some how!
Anyway, I have to recipe:
(I can scan the card, for anyone wanting the a photo copy.)
And it goes like this:
SESAME-SOY MARINATED CHUCK ROAST
Preparation Time: 10 min. Cooking Time: 2 to 2 1/2 hrs.
Marinating Time: Overnight Oven Temperature: 325 degrees F.
Flavored with soy and sesame seeds this chuck roast is marinated
overnight. The coffee and vinegar help to tenderize the roast,
which is bake in a covered casserole in a slow oven for 2 1/2 hrs.
For 6 servings you will need:
4 to 5 lbs chuck roast
1 Tbsp. sesame seeds
1 Tbsp. butter or margarine
1/2 cup strong coffee
1/2 cup soy sauce
1 Tbsp. Worcestershire sauce
1 Tbsp. Vinegar
2 Tbsp. Cornstarch
3 Tbsp. sherry or water
1 tsp. sesame seeds (optional)
Tips: You may pour hot marinade over frozen meat and allow to
marinate for two days before cooking.
PREPARATION:
1. Place roast in large bowl or dish with cover.
2. Brown sesame seeds in butter 1 min. over medium heat in shallow pan.
3. Add coffee, soy sauce, Worcestshire sauce and vinegar. Heat to boiling.
4. Pour marinade over roast. Marinate overnight.
5. Remove roast from marinade. Brown on both sides in heavy flame-proof casserole dish. Pour marinade over, cover. Bake at 325 degrees F. for 2 to 2 1/2 hrs.
6. Remove roast from casserole. Remove excess fat. Strain drippings, bring to a boil.
7. Add cornstarch mixed with sherry or water. Whisk until thickened. Stir in additional tsp. of sesame seeds, if desired. Pour over roast. Slice to serve.
Good served with: Parsley buttered potatoes, cooked tiny carrots, and green salad.
For 8 to 10 servings:
Use 1 1/2 times the ingredients.
