Recipe(tried): Shelly- sugar free pie

I've not tried already made sugar free pie fillings---ut I often make my own. Just yesterday made a cherry pie. Buy any non-sweetened fruit, drain fruit, measure juice. Add juice to sauce pan with 2 tsp. cornstarch per cup. Cook until boiling and sauce is thickened. Add fruit and enough artificial sweetener ( any type except aspertame) to equal 1-2 cups sugar (taste). Pour in pie shell and bake as usual.

Fresh fruit pie- chop fruit add tbs. flour and sugar substitute (I like brown sugar substitute). Bake in pie crust like any other pie.

We really love ice cream pies. I line springform pan with sugar free cookie crumbs/ground pecans then layer 3 different colors/flavors of sugar free ice cream. Freeze for a few hours/days. Makes a georgeous dessert for a group. You can top with a little fresh fruit puree or sugar free fudge sauce.

Also make quickie pies with cookie crust and sugar free pudding with 8 oz. softened cream cheese blended in.

Hubby (diabetic) also likes to take wine glasses and layer fresh fruit/sugar free pudding/ whipped topping
