Recipe: Shrimp and Asparagus Sandwiches with Herb Mayonnaise

SHRIMP AND ASPARAGUS SANDWICHES
WITH HERB MAYONNAISE
FOR THE HERB MAYONNAISE:
1/4 cup mayonnaise
1 teaspoon Dijon mustard
1 teaspoon lemon juice
1 clove garlic, minced
2 tablespoons minced mixed herb mixture (chives, parsley and basil)
Salt and freshly ground black pepper (to
FOR THE SANDWICHES:
4 slices sourdough bread
10 large shrimp cooked and peeled
8 asparagus spears cooked
Combine the mayonnaise, mustard, lemon juice, garlic and herbs in a bowl. Season with salt and pepper to taste and mix well.
Spread 2 bread slices with half the mayonnaise mixture, Place the shrimp and asparagus spears on top. Dollop on the remaining mayonnaise and cover with the other 2 bread slices.
