Recipe: Shrimp and Watermelon Salad Rangoon

Shrimp and Watermelon Salad Rangoon

Makes 4 servings

1 pound medium shrimp, cooked, peeled and deveined
2 cups watermelon cubes
1 green pepper, julienned
1/2 onion, thinly sliced
2 cups pineapple, cubed
1 cup mayonnaise
1/2 cup low-fat yogurt
1 Tbsp curry powder
1 head iceberg lettuce

In a large bowl, combine shrimp, watermelon, pepper, onion and pineapple. In a small bowl combine mayonnaise with yogurt and curry powder; blend well. Pour over melon mixture and gently blend together. Serve over shredded lettuce.
