Fruited Chicken Salad (with curry and almonds)

A great summer salad. Always gets rave reviews. Prepare the day before it's needed and take it to a picnic or party.

2 lbs cooked chicken -- boned and chopped
1 cup mayonnaise
3/4 tsp curry powder
1 tsp soy sauce
1 cup cantaloupe balls
1 cup seedless green grapes -- sliced in halves
1/4 cup pitted black olives -- sliced
1/4 cup almond slivers
salt to taste

Mix mayonnaise, curry, and soy sauce with cooked and chopped chicken. Chill until very cold--at least two hours, overnight if possible. About 1 hour before serving, add cantaloupe, grapes, olives, almonds, and salt. Toss together. Serve on lettuce.
