Recipe: Shrimp with Orzo & Feta

SHRIMP WITH ORZO AND FETA
(I got this today in an e-mail from Ladies Home Journal)

This Mediterranean-style dish is not only quick and easy to make but it's
also a meal your family will really enjoy.

Prep time: 20 minutes plus standing
Microwave time: 5 minutes
Degree of difficulty: easy
Low-fat
Low-calorie

1 pint cherry tomatoes, quartered
2 tablespoons chopped fresh dill
1 teaspoon extra-virgin olive oil
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
8 ounces (1 1/2 cups) orzo pasta, cooked according to package directions
1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
10 ounces medium shrimp, cooked and peeled
1/2 cup (2 oz.) feta cheese, crumbled
1 tablespoon freshly grated Parmesan cheese

Combine tomatoes, dill, oil, garlic, salt and pepper in large bowl. Let
stand 10 minutes. Stir in orzo, then add spinach, shrimp, feta cheese and
Parmesan. Spoon into shallow 1 1/2-quart microwaveproof casserole. Cover
and microwave on High 5 minutes or until heated through. Makes 4 servings.
