Recipe: Simple Pilaf

Simple Pilaf

1 Cup long grain rice, rinsed
1/4 Cup vermicelli or spaghettini, broken into short pieces
1 can chicken broth (lower fat, lower salt would be okay)
1/2 onion, diced fine
2 TB butter

In a heavy saucepan, melt the butter over medium heat and cook the onion until translucent. Add the rice and stir for a couple of minutes until it is all coated and has begun to change color (I mean opacity, not browning). Add the vermicelli and the chicken broth, bring to a boil. Reduce heat to lowest setting, cover, simmer for 17 minutes, turn off heat and let sit, still covered, for another five to ten minutes.

Options: stir in some chopped parsley before serving; stir in 1/2 cup of cooked peas before serving; use a couple of shallots instead of the onion.
