Recipe(tried): Slim-Jim Shrimp, Salmon Packets, Roasted Potatoes, Slimy Okra

On Tuesday night everything that I touched seemed to turn to mud! I was cooking some peas--they burned. I was cooking "slimy" okra--it burned. The only things that didn't burn were the Slim-Jim Shrimp, rice, watermelon chunks, and sweet tea with lemon.

Lord have mercy on me. I don't want to have any more days as tedious as Tuesday!
SLIM-JIM SHRIMP--Begin in the morning. The shrimp need to marinate.

2 lbs. shrimp--deveined, shelled, with tails
1 bottle no-fat Italian salad dressing
2 tsps. minced garlic
1/4 cup wine
chopped parsley

In a heavy-duty Zip-Loc bag, place the shrimp. Combine the Italian salad dressing and minced garlic. Pour over the shrimp and let marinate for 4-6 hours.

When ready to cook, preheat the oven to 350. Spray a 9X13" pan with canola oil. Remove shrimp from marinade and place in pan. Discard marinade. Pour white wine over shrimp. Put the pan into the oven and let shrimp cook until pink on both sides--5-7 minutes.

When shrimp are done, remove the pan from the oven and sprinkle with chopped parsley. Serve with lemon wedges and cocktail sauce.
Wednesday was a better day--perhaps because I went shopping and out to lunch with one of my "bestest" buddies. She was looking for a new freezer and I helped her buy one of the best! Now she has to wait until AUGUST 11th to have the darn thing delivered!

Luckily, I didn't burn anything today!

Tonight for supper we had: Salmon Packets, "slimy okra," roasted potatoes, sweet tea with lemon, and steamed broccoli.

SALMON PACKETS

4 4 oz. salmon filets
1 bottle of Hellman's Citrus Splash! Salad Dressing--I used Oriental Orange
1 Vidalia onion, sliced into rings
1 red bell pepper, sliced thinly
1/2 pkg. fresh mushrooms, sliced thinly
Seasoned salt and pepper
garlic powder
lemon juice

Place the salmon into a large Zip-Loc bag and pour the bottle of salad dressing over it. Let it marinate for 30-45 minutes.

Preheat the oven to 350. Tear 4 large sheets of aluminum foil. Remove the fish from the marinade and discard the marinade. In each piece of aluminum foil, put the following:

salmon filet, skin down
onion slices
red pepper slices
mushrooms
seasoned salt and pepper
garlic powder
splash of lemon juice

Make a "packet" out of each piece of aluminum foil by folding the edges until the fish and the vegetables are covered. Put the "packets" into the oven and cook for 20-30 minutes or until fish flakes easily.

Serve with cocktail sauce and lemon wedges.
ROASTED POTATOES

3-4 medium potatoes, peeled and sliced into round slices
garlic powder
olive oil
seasoned salt and pepper

Preheat oven to 350.
Line a baking sheet with aluminum foil. Spray the foil with canola oil. Put the potato rounds on the aluminum foil making sure that the potato rounds are in one layer. Sprinkle the potato rounds with garlic powder, seasoned salt, and pepper. Drizzle olive oil on the top of the potatoes. Cook for 35-45 minutes or until potatoes are done.
SLIMY OKRA

10-12 pods okra
1 tsp. corn oil
1/2 cup water
seasoned salt

Wash the okra and cut off the tops. Place the okra in a medium saucepan. Pour the water over the okra. Add the corn oil and seasoned salt. Cook on low for 20 minutes, adding water as needed.
