Recipe(tried): Mary Meekers Halupki (Cabbage Rolls) - makes 50

MARY MEEKERS HALUPKI (CABBAGE ROLLS)

2 heads cabbage
2 lbs. ground beef
2 lbs. ground pork
3 eggs
1 chopped onion
2 cloves garlic, minced
4 cups white rice, uncooked
2 large cans tomato juice
2 cans (8 ounces each) tomato paste
3 cups water
Salt and pepper to taste

Boil cabbage until soft; do not overboil. Separate leaves.

Mix together beef, pork, eggs, onion, salt and pepper, garlic and uncooked rice. Roll meat mixture into balls and place them on the cabbage leaves, folding bottom up and sides in so that rolls are closed on each end.

Place rolls into a large pot and add the tomato juice, tomato paste and 3 cups of water.

Cover pot with a lid and place on stove to boil. Boil for 1 to 2 hours or until meat is cooked and cabbage soft. Don't overcook or rolls will fall apart.

Makes cabbage 50 rolls
