PREP TIME: 30 Minutes
2 pounds seedless watermelon
1 mango
1/2 ounce grated ginger
8 ounces peach, apricot or berry puree
2 kumquats, sliced
Edible flowers for garnish
Place 1 pound of diced watermelon in food processor and blend to liquefy. Set aside and refrigerate. Finely dice remaining watermelon and mango and place with grated ginger in a bowl and allow to marinate. When ready to serve, place an equal amount of the fruit puree in a soup bowl along with equal portions of the marinated melon-mango mixture. Top with watermelon juice. Garnish the rim of the bowl with kumquat slices and edible flower petals.

BECKY'S CROCKPOT BEEF STEW

1 package brown gravy mix
1 can mushroom soup
3/4 cup water
1 tablespoon Worcestershire sauce
1 large onion -- chopped
1 bell pepper -- cut in strips
2 stalks celery -- sliced
2 pounds stew meat -- cubed
3 carrots -- thick slices-3/4 "
3 potatoes -- 1 in. cubes
1 can button mushrooms
Stir together gravy mix, soup, water, Worcestershire, onion, pepper and celery in bottom of crockpot.
Add stew meat. Stir.
On top of that mixture layer carrots, potatoes, then mushrooms.
Cook 8 hours on high. If you are home stir once. If not stir when you get home from work.

BREAD--NEW ORLEANS MUFFULETTA STUFFED (bread machine)
Recipe By : BECKY
Excellent for a buffet, picnic or as an appetizer.
FOR THE BREAD DOUGH:
1 1/2 cups warm water (80-100 degrees F)
2 tablespoons olive oil
4 cups bread flour
1/4 cup grated Parmesan cheese
1 teaspoon salt
2 teaspoons yeast
FOR THE FILLING:
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/2 cup grated Romano cheese
3/4 cup Ricotta cheese
1/4 cup chopped ham
1/4 cup chopped pepperoni
2 cloves garlic, chopped fine
TO PREPARE THE DOUGH:
Add all ingredients to bread machine according to manufacturers directions. Process with machine on DOUGH setting.
TO FILL AND BAKE:
Roll bread dough into a 20x15-inch rectangle. Sprinkle each ingredient from the filling list evenly over dough. Roll jelly roll style to make 20-inch loaf. Be sure to seal edges and ends carefully.
Place seam side down on baking pan. Let rise 45-60 minutes
Bake at 375 degrees F for 30 minutes. Cool on wire rack.
When partially cooled slice into 1-inch slices. Serve warm or at room temperature.

1/2 stick butter -- melted
1/4 cup vegetable shortening
1 large egg -- beaten
4 cups flour
1/4 cup sugar
1 tablespoon yeast
SEED TOPPING
1 large egg -- beaten
1 tablespoon water
1/4 cup sesame seeds
MIX DOUGH INGREDIENTS IN BREAD MACHINE.
DIVIDE DOUGH INTO HALF.
ROLL EACH HALF INTO 18 X 9 INCH RECTANGLE.
CUT INTO 3 INCH X 1/2 INCH STRIPS.
ARRANGE ON BAKING SHEETS.
COVER AND LET RISE 1 HOUR.
BEAT WATER AND EGG. BRUSH ON STICKS AND SPRINKLE WITH SESAME SEEDS.
BAKE AT 350 DEGREES. FOR 15-20 MINUTES.

2 large eggs -- beaten
1/2 cup butter -- melted
1 teaspoon vanilla
1/2 cup sugar
3 cups four
1/2 cup instant potato flakes
1 teaspoon salt
2 teaspoons bread machine yeast
TOPPING
1 cup brown sugar
2 teaspoons cinnamon
1/2 cup butter -- melted
ICING
3/4 cup powdered sugar
4 teaspoons milk
PLACE DOUGH INGREDIENTS IN MACHINE,, SELECT DOUGH SETTING.
WHEN DOUGH CYCLE HAS COMPLETED. TURN DOUGH OUT ONTO FLOURED BOARD.
GREASE A 15X10 OR 16X12 BAKING PAN.
STRETCH DOUGH TO FIT PAN.
PRESS EVENLY IN PAN.
SPRINKLE WITH BROWN SUGAR, CINNAMON AND DRIZZLE WITH BUTTER.
COVER AND LET RISE 30-45 MINUTES. OR DOUBLED IN SIZE.
BAKE AT 350 DEGREES FOR 15-20 MINUTES OR LIGHT BROWN.
MIX POWDERED SUGAR AND MILK. DRIZZLE ONTO CAKE WHILE WARM.

1 (13 oz.) can evaporated milk
3 eggs
1 cup sugar
1 cup flaked coconut
3 tablespoons all-purpose flour
3 tablespoons vegetable oil
1/2 teaspoon vanilla extract
Ground nutmeg
Combine all ingredients except nutmeg in container of blender. Process mixture until well blended.
Pour into a greased and floured 10-in pie plate (mixture will be thin). Sprinkle top of mixture with nutmeg; bake at 325 for 40 min or until pie is set. Let pie stand before serving.

2 lemons -- white pith removed
1/2 cup water
1/4 cup simple syrup -- recipe in directions
1 1/2 cups crushed ice
FOR EACH SERVING:
Place 2 lemons, simple syrup, and water in a blender with top on and blend at medium speed until lemons are liquefied. Add ice and
blend on high until pureed (3 to 4 minutes). Serve in a tall glass with a straw and iced tea spoon and garnish with a lemon wheel.
NOTE: Recipe can be adjusted to your personal preferences for sweetness or tartness.

1 lg Egg
1 tb Vinegar
1/2 ts Salt
1/4 ts Dry Mustard
1/8 ts Paprika
1 ds Cayenne Pepper
1 c Salad Oil
1 tb Lemon Juice
Put the egg, vinegar, salt, dry mustard,
paprika, and cayenne in a blender
container, blending until well mixed.
With the blender RUNNING SLOWLY,
gradually pour half of the salad oil
into the blender container. (When
necessary, stop the blender and use
a rubber spatula to scrape down the
sides.) Add the lemon juice to the
mixture in the blender and slowly pour
the remainder of the salad oil into
the blender container, with the
blender running slowly.
Makes about 1 1/4 cups.

1 sack or box of frozen fruit
orange juice
Put fruit in blender, add enough orange juice to get the frozen fruit started getting blended. Blend until you have a slushy mixture, then pour into individual Jell-O molds. Place on pizza pan or cookie sheet; freeze. When ready to serve, unmold onto dessert plate.

Anadama Bread
An old New England favorite
1/4 c. yellow cornmeal
1/2 c. water
1/4 c. molasses (I'd add a bit more; 1 recipe added
also 1/4 c. brown sugar
2 T. butter
2 1/2 c. all-purpose flour (I'd use more like 3 c. ..
dough was VERY sticky .. you want it to form a ball)
1 pkg. yeast
3/4 t. salt
1/2 c. water (110 degrees F)
1) Cook cornmeal in water 1-2 min. in micro, stir once (or over high heat until thickened).
2) Remove from heat and stir in butter and molasses. Let cool to 110F.
3) In food processor, pulse to blend dry ingredients, 3-5 seconds
4) Add cooked cornmeal to dry ingredients. With processor running, add water through chute in steady stream until dough forms a loose ball.
Do not process longer than 30 seconds (another recipe says process 1 minute). If ball doesn't form, shape into ball, put in sprayed bowl and rotate to grease surface.
Cover and let rise until doubled, about 1 hour.
Punch down and shape as you wish .. in loaf pan, long loaf like French bread, in greased 2 qt. casserole, rolls, etc. Let rise until doubled,
about 1/2 hour.
Bake in preheated 375F oven for about 45 minutes for whole loaves (less for rolls, of course) (Janet: I cook bread to internal temperature of 200-210F and it's always perfectly cooked).
I wasn't sure how I liked this until it was cold. I loved it toasted, for sure. Hope you enjoy it. You can make it with the same ingredients by your favorite method, of course .. this is just easiest for me.

8-10 lg. cooking apples,peeled,cored,and chopped
1/2 cup water
1/2 cup sugar
1 tsp. cinnamon
Combine all ingredients in large crockpot. cover and cook on low 8 hours. for smooth applesauce, place apples in a food processor and blend to desired texture before putting in crockpot.

2 lb. kielbasa
1 jar of spaghetti sauce (I like Ragu traditional the best)
Cut kielbasa into 1 inch slices. Take off skin. Place in crockpot. Pour sauce over kielbasa. Cook 3 hours on med heat. Reduce heat to low til ready to serve. Great on hoagie buns.

1 1/2 lbs. smoked sausage-sliced thickly
1 pkg. (2 lb) hash browns (not thawed)
5 green onions-sliced
pepper to taste
garlic powder to taste
1 can cheddar cheese soup
1 soup can milk
Combine sausage, hash browns,green onions, pepper and garlic powder in well-buttered crockpot. stir gently to mix.
Whisk together soup and milk. Pour over ingredients in crockpot. cook on low for about 6-8 hours.

2 lbs. boneless, skinless chicken breast
2 cans condensed cream of chicken soup
1 can condensed cheddar cheese soup
1/4 tsp. garlic powder
Place chicken breasts in the crockpot. Mix the undiluted soups together with the garlic powder and pour over chicken. cover and cook on low 6-8 hours, until chicken is tender.
Serve with the delicious sauce over rice or noodles.
This freezes well, too.
