Verla,.Il (08:43:29) : SHERRIED BEEF ROAST

Nesco Electric 6 qt roaster method!

3 to 4 lb Beef Roast: sirloin or tenderloin
4 T. BUTTER or MARGARINE
1/2 c. ONION, diced
4 T. SOY SAUCE
1 1/2 c. SHERRY
1/4 tsp GARLIC PEPPER
Turn roaster temp to 375 degrees.
Place onions and butter in roaster.
Bring roast to room temperature and place in Nesco.

Brown roast on all sides.
Turn temperature back to 325.
Add remaining ingredients. Salt and pepper to taste!
Roast at 375 degrees until desired degree of doneness. Serves 8. You can thicken the juices with 3 T. flour mixed with 1/2 c. of water for delicious gravy.

A three pound roast will take about 2 hours.

DELICIOUS!

If you do not have a Nesco you can brown the roast in a pan with the butter and onions and then roast in the oven uncovered for 2 hours at 325 or until done as you prefer.

1 3/4 cups [440 mL] all-purpose flour
3 teaspoons [15 mL] baking powder
1/2 teaspoon [2.5 mL] salt
2 eggs, separated
1 3/4 cups [440 mL] milk
1/2 cup [125 mL] vegetable oil
1/2 cup [125 mL] grated cheese

Sift together flour, baking powder and salt.
Mix together already beaten egg yolks, milk, vegetable oil and grated cheese.
Mix egg mixture into dry ingredients.
Beat egg whites until stiff peaks form; fold into first mixture.
Cook in a preheated griddle

(Great for strawberry shortcake or with ice cream and berries)

1 cup butter
1 cup sugar
1 and 3/4 cup flour
4 eggs
twist of lemon

Sift flour and sugar together in a bowl.
In a separate bowl, beat eggs until fluffy.

Add eggs to flour/sugar and beat together thoroughly.

Add butter, twist of lemon and mix till smooth.

Pour scant 1/3 cup of batter on the heated waffle mold

Makes about 12 to 18 waffles.

CHOCOLATE WAFFLE COOKIES

1 cube Margarine
7 T. Cocoa
4 Eggs
1 t. Vanilla
1-1/2 c. Sugar
2 c. Flour
1/2 t. Salt

Mix together margarine, cocoa and eggs. Add remaining ingredients and blend well.

Bake in a hot waffle iron for about 1 minute. Frost with chocolate frosting.

Nutty Waffle Cookies

Ingredients
1 1/2 cups white sugar
1 cup butter, melted
4 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 cup chopped walnuts

In a medium bowl, mix the sugar and butter together.

Stir in the eggs and vanilla. Then mix in the flour, cocoa, and walnuts. Preheat the waffle iron.

Drop dough by heaping tablespoons onto the center of the waffle iron. Close the lid and cook for 1 1/2 minutes.

It may take more or less time depending on the individual waffle iron. Cut the pieces into cookies while still warm. Dust with confectioners' sugar if desired.
Makes 4 dozen

Patterned Waffle-Iron Cookies

Ingredients
1 pound butter
2 1/3 cups white sugar
2 teaspoons vanilla extract
1 teaspoon salt
9 eggs
4 1/8 cups all-purpose flour

Preheat the waffle iron on medium setting.

In a large mixing bowl, cream the butter and sugar. Stir in the vanilla and salt. Add eggs one at a time, mixing after each addition. Then stir in the flour.

Drop the batter by heaping soup-spoonful onto the waffle grid. Close the cover and bake for about 3 minutes and 20 seconds. Every waffle iron is a little different so you may want to test it on the first couple of cookies. Place finished cookies onto a wire rack to cool.

Makes 4 dozen

Chocolate Waffle Cookies

(These are also good frosted with sprinkles or chopped nuts.)

Ingredients
2 (1 ounce) squares semisweet chocolate
1/3 cup butter
2 eggs
3/4 cup white sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
2 tablespoons confectioners' sugar

In a heavy saucepan, combine the chocolate and butter. Cook over low heat, stirring constantly, until smooth. Preheat and grease waffle iron.

In a medium bowl, beat together the eggs, sugar and vanilla until light. Stir in the chocolate mixture, then gradually stir in the flour until smooth.

Drop batter by heaping spoonfuls onto the preheated waffle iron to make four cookies at one time. Close waffle iron and cook for 60 to 90 seconds, or until cookies are firm. Remove from iron to cool on wire racks.
Dust with confectioners' sugar when cool.
Makes 2 dozen

SUPREME SOUR CREAM CHOCOLATE CHIP CAKE

1 box Duncan Hines Devil's Food Cake Mix
1 small box instant chocolate pudding
4 eggs
1/2 cup oil
1 cup water
1/2 to 3/4 pint sour cream
6-oz. bag chocolate chips (semi-sweet)

Mix all ingredients except the chocolate chips until smooth and creamy. Fold in chocolate chips. Pour into a well-greased and floured Bundt or tube pan. Bake at 350 degrees for 55-60 minutes. Remove and let cool. Refrigerate if keeping more than a day or two (it won't last that long). I have served this plain with whipped cream or vanilla ice cream but most of the time I also add still more chocolate by making the following glaze to drizzle over the top:

CHOCOLATE GLAZE

2 tablespoons butter or margarine
2 tablespoons Hershey's Cocoa (not instant)
2 tablespoons water
1 teaspoon light corn syrup
1 cup confectioners' sugar, sifted
1/2 teaspoon vanilla

Melt butter in small saucepan over low heat; add cocoa and water, stirring constantly, until mixture thickens. Add corn syrup. Do not boil. Remove from heat; blend in confectioners' sugar and vanilla. About 1/2 cup glaze. Immediately drizzle over bundt cake.

Note: Hubby likes to pop a slice in the microwave just a few seconds to re-melt the chocolate chips.
