Recipe(tried): Mom's weird and wonderful ways of stretching a meal.
Recipe CollectionsMy mom used to make a version of Slumgullion at least once a week. There were 6 of us kids and she knew how to fill us up with good food using leftovers.
Her recipe for this was varied but here's the basics:
Day 1- Spaghetti for dinner.When there is not enough left over spaghetti sauce for "another round" save it.
Day 2- Macaroni and cheese (home made)rice or potatoes with dinner. Save the leftovers.
Day 3- Mixed vegetables served with dinner. Save the leftovers.
Day 4-Stuffed peppers with meat. Save the leftovers.
Day 5-Put it all in a big pot with water and chicken bullion. Serve with home made garlic bread or corn bread. Also good with dumplings.
Basically, she cooked foods during the week that would make a good Slumgullion at the end of the week. The options are endless!
