Recipe(tried): Smokehouse Quartet

Smokehouse quartet is a great recipe for brunch. You could serve with quiche,
muffins or pastries and some fruit. Below is a recipe for Copper Mountain
Quiche. I have had this but have not made it. It is good too.

SMOKEHOUSE QUARTET
(Serves 8)
16 oz thick ham slices, cut in bite size chunks
16 oz sausage patties, the size of half dollars, well browned
12 link sausages,cut in half, well browned
12 oz. smoked sausage(little smokies)
Cook meat in skillet until well browned and cooked through. Place in casserole
dish.

Prepare sauce:

3 apples, cored, sliced
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 Tbsp. cornstarch
2 c. cranberry-apple juice

In skillet where meat was cooked, pour out drippings except for 2 Tbs. Add
apple slices and sprinkle with cinnamon and nutmeg. Cook over medium heat,
until apple slices are tender. Remove slices and set aside, reserving juice in
skillet. Blend cornstarch into juice. Add cranberry-apple juice. Stir constantly
over medium heat until mixture thickens and bubbles. Pour over meat and toss.
Cover and hold in a warm oven until ready to serve.


COPPER MOUNTAIN QUICHE

1/2 c. butter
4 oz. cream cheese
1 c. + 2 Tbsp. flour
1 pkg. frozen spinach
1 c. grated Cheddar cheese
1 c. grated Swiss cheese
3 eggs
1/2 c. mayonnaise
1/2 c. milk
10 slices bacon
1 bunch green onions

Combine butter, cream cheese and 1 cup flour until
crumbly. Press in pie plate to form crust. Refrigerate. Cook
spinach until tender. Drain well and chop. Brown and drain
bacon. In large bowl combine spinach with 2 tablespoons flour
and remaining ingredients. Mix well. Pour this mixture into
pastry shell. Bake 1 hour at 350 degrees. Serve hot. Serves 8.
