Recipe(tried): Oven chimichanagas and potato quiche rec

Brenda,here are a couple of ideas that perhaps you could use. unfortunely I
don't have exact recipes written down but think enough that you could figure
them out.

If you want to use crepes, try using very thin torillas instead of having so
many crepes to make. I don't know where you live in Tx, but I shop at Central
Market in Austin and they make their own torillas that are paper thin and can
be used for so much.

The oven bake chimichangas are easy, can be done ahead and the fillings can be
whatever you choose, shredded beef, chicken or pork sausage. I will give these
amounts as a guide line.

15 ounces shredded chicken
1 4 ounce can chopped green chiles, drained
1 cup shredded Monerey Jack cheese
1/2 cup sliced green onions
8-9 inch flour tortillas

combime first 4 ingredients; set aside. Wrap tortillas in damp paper towels
and microwave on high 15 sec or till hot. Spray torillas with cooking spray.
Place 1/2 mixture on center of each tortilla. Fold in sides and fold up
bottowm to form a rectangle. Place filled tortillas on lightly sprayed baking
sheet. Spray tops of filled tortillas. Bake 425 for 10 min. Serve with
picante sauce, a green salsa or mango salsa. Serves 4. From this you could
probably figure the amounts easily. I have varied what I put in them also;
black olives, different cheese, etc.

Potato Quiche

use 1-1 1/2 med potato per person. shred the potatoes and brown lightly in a
veg sprayed skilled. While the potatoes are still warm, shape into crusts in
either ramekins or foil pot pie pans. Make the shell thick enough to hold the
filling. For the filling, use your favorite quiche recipes and divide among
the individual pans. Bake until filling is set, using the time on the recipe
of quiche you use. Garnish with fresh herbs and serve with a salsa.

I realize the above directions are very vague. But enough that I think you get
the idea. You could even make these in pie pans if you wanted and cut them
into pieces but it is nice to have the individual ones.

With either of these, i would serve either a baked fruit compote or have lots
of fresh fruit and an assortment of muffins, along with juice and coffee and
maybe a spiced tea. Hope this will be of some help.
